The French Ratatouille is an all-time authentic classic dish. It originates from Provence and is a healthy dish which can be served on its own or with some meat or fish.

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons dried parsley
  • 1 eggplant, cut into 1/2 inch cubes
  • salt to taste
  • 1 cup grated Parmesan cheese
  • 2 zucchini, sliced
  • 1 large onion, sliced into rings
  • 2 cups sliced fresh mushrooms
  • 1 green bell pepper, sliced
  • 2 large tomatoes, chopped
Preheat your oven up to 350 degrees F ( which is about 175 degrees C). Take a casserole dish and in the bottom, put 1 tablespoon of olive oil. Heat the remaining tablespoon of olive oil in a pan with medium heat. Cook and stir garlic until they get slightly browned. Put together in parsley and eggplant. Then, you must cook for about 10 minutes and stir regularly until the eggplant get soft. After that, you have to put just a bit of salt to taste. Spread eggplant mixture evenly across bottom of prepared casserole dish. Sprinkle with some tablespoons of Parmesan cheese. In addition to the Parmesan, you now should spread zucchini in an even layer, just over the top. You may want to salt lightly and sprinkle a little more cheese on there too. Keep layering in the same way, with onions, bell pepper, mushrooms, and the tomatoes, covering each layer by sprinkling cheese and some salt as well if you wish. You should check the amount of salt in the cheese as you do not want the result to be too salty. Bake in your warm oven for about 45 to 50 minutes minutes.
